Victoria C. Kitchen: Taiwanese fried chicken 鹽酥雞

If there's one thing Taiwanese people can do really well, it's frying things. This weekend I made fried chicken, which is a nightmarket staple. This is so good, my vegetarian baby cousin eats it.
Ingredients
1 lb chicken breast (or thigh)
1/2 cup soy sauce
1/3 cup rice wine
1 clove garlic
1/2 teaspoon white sugar
1/2 teaspoon five spice powder
2 cups sweet potato starch
Oil, for frying
1 bunch basil
1 tablespoon white pepper powder

Procedure
1. Cut chicken into 1-inch pieces and put into a large bowl.
2. Add soy sauce, rice wine, garlic, sugar, and five spice into the bowl and mix well. Let marinade for 30 minutes.
3. Drain marinade. Pour sweet potato starch into a large bowl and coat chicken well.
4. Heat oil in a large pan over medium-high heat, and fry chicken until golden. Right before taking the chicken out of the oil, add the basil into the oil and fry for 15 seconds, and remove. Season with white pepper.
